These are nutritious and healthy indulgences, if you crave for desserts and want to have them guilt free. Due to the addition of spinach and whole wheat they are rich in dietary fibers and iron and also make you fill full. You can use them as breakfast muffins with any beverage or pack them as snacks.I thought my kid won’t touch it, knowing about spinach but to my surprise she had two of them and asked for more to pack in her tiffin-box . For kids I added a dark chocolate piece at the center which took the dessert to a different level altogether. I tried this dish for the first time , and so was not sure it will come out so well . Now planning to improvise it and make many more variations and take videos and click more pictures. Do let me know in comments if you try this dish.
Dry Ingredients
- 2 cups Whole wheat flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup brown sugar powdered
- 1/4 tsp cinnamon,cloves,green cardamom in equal proportions ,powdered
Wet Ingredients
- 1 1/2 ripe bananas
- A handful of spinach leaves
- 100 gm dark chocolate cut into cubes
- 1/4 cup vegetable oil
- 1/2 tsp lemon juice
- 1/4 tsp vanilla
Preparations
- Strain the dry ingredients and mix them with a spoon
- grind bananas and spinach into a paste in the grinder.
- Mix lemon juice ,oil and vanilla with a spatula.
- Add the spinach and banana paste. and beat lightly to form a thick airy mixture
- fold the dry ingredient mixture lightly into this liquid with a spatula,till the mixture is uniform.
- Grease the muffin mold.
- Pour this mixture in the muffin molds till 3/4th full.
- Into each muffin insert a chocolate cube at the center and even the top with a spatula.
- Bake for 30 minutes in a preheated oven at 170 degrees.
- Serve at room temperature.
