It is a delicious preparation for the summer prepared by thickening milk and adding flavors to it. The main challenge here is to freeze the kulfi in the freezer as with the increase in the content of sugar it becomes very soft and difficult to freeze. You can add fruits syrups or even chocolate to make different varieties. It is absolutely simple and yummy preparation, especially on a hot summer afternoon. 
The word Kulfi comes from the Persian word, meaning covered cup. This dessert is said to have originated during the Mughal empire. During our childhood, there were ice cream carts on wheels delivering kulfis with a wooden stick at your home. What nostalgia!
 

Ingredients

  1. 1/2 liter Milk
  2. 1 tsp. Saffron or Kesar
  3. 1 tbsp cardamom powder
  4. Sugar (as per taste)

Preparation

  1. Boil milk on a low flame till it is reduced to half.
  2. add cardamom powder and saffron strands and boil for 5 minutes.
  3. add sugar as per how much sweet you want.
  4. The more sugar you add the kulfi you get is softer.

Freezing

  1. pour the milk mixture in a kulfi can
  2. in a plastic basket add ice cubes and add a cup of salt.
  3. salt helps to lower the temperature even further.
  4. lower the temperature of your refrigerator by adjusting the regulator.
  5. keep it overnight.

Ingredients for the falooda

  • Basil seeds
  • Noodles
  • Rose syrup

Preparations

  1. Soak sabja or basil seeds in water for 15 minutes.
  2. Boil some sevai or noodles in water, strain, and cool.
  3. Add 2 tbsp of sabja, rose syrup, noodles and make a mixture.
  4. Take out the Kulfies from the cans
  5. pour over the kulfi and serve.

    What an interesting recipe! I’ve never seen anything like it. What do you think could be used if I can’t get kulfi cans?

      You can use any mold Lisa, a little bigger chocolate molds, popsickle molds etc.
