Today, I’m making fresh rice paper rolls with bean sprouts and tofu — the perfect healthy summer snack!These rolls are packed with the goodness of vegetables, avocado, and protein-rich tofu. You can use a firm avocado for this recipe, but I had an overripe one on hand, so I simply chopped it into pieces.I’m also using homemade bean sprouts, which are loaded with nutrients and add a lovely crunch. For the dipping sauce, blend together peanuts, chilies, dates, and a pinch of salt until smooth. It creates the perfect balance of spicy, sweet, and nutty flavors.

Next, heat a little olive oil in a pan and sauté your vegetables with a teaspoon of soy sauce. Separately, fry the tofu until it’s golden brown and crispy.

Now for the fun part! Dip a rice paper sheet in warm water for a few seconds until it softens. Layer it with lettuce, raw bean sprouts, sautéed vegetables, avocado, and crispy tofu. Fold in the sides and roll it up tightly. You can also add glass noodles. Simply soak them in hot water, rinse, and add them to the rolls for extra texture. Cut the rolls in half, serve them with the peanut dipping sauce, and enjoy a nutritious, low-calorie snack that’s fresh, filling, and full of flavor.

Ingredients

  • 4 to 5 rice papers
  • Handful bean sprouts
  • 1/2 cup carrots strips
  • 1/2 cup beans chopped
  • 1 Avocado chopped
  • 100 gms tofu
  • glass noodles
  • Lettuce leaves
  • 1 tbsp soy sauce

peanut sauce

  • 1 cup groundnuts
  • 2 to 3 red chilies
  • 4 o 5 soaked dates
  • 1 tbsp of honey
  • Salt to taste

Instructions

  • Soak the rice papers in warm water
  • saute the vegetables in oilve oil with 1 tsp soy sauce till theu are tender
  • Keep some raw bean sprouts aside
  • fry the tofu till crispy
  • soak the glass noodles in hot water and rinse
  • Lay down the soaked rice paper.
  • layer with lettuce, sauted veggies,beansprouts , tofu ,glass noodles and avocado
  • Roll the rice paper folded on both sides to seal.
  • Dip them in the peanut dipping sauce and eat fresh

Dipping sauce

  • Grind all the ingredients till smooth
