Chocolate rum and raisins Christmas cake

The Christmas festival is incomplete without a rich spicy cake. Traditionally the cake is made with dry fruits and then soaked in alcohol like whisky or brandy. In India most commonly rum is used. This is a different cake where I have used chocolate. One can prepare and serve this cake during any festivals or get together to make  friends and family members happy.

Ingredients

  1. Refined flour (1 cup)
  2. Cocoa powder(1 cup)
  3. Baking powder( 1 tbsp)
  4. Baking soda (1/2 tbsp)
  5. Butter (1 cup)
  6. Ghee(1 cup)
  7. Powdered Sugar (2 cups)
  8. Milk (1 cup)
  9. Orange pulp seeds removed  crushed (1 cup)
  10. eggs (2)
  11. Vanilla (1 tsp)
  12. Walnuts( 1 cup chopped)
  13. Black raisins (1 cup chopped)
  14. Rum (2 to 3 tbsp)
  15. Chocolate (20 gms)
  16. Cream (1 cup)
  17. Sprinklers

Spices(ground and strained)

  1. Cinnamon (2 sticks)
  2. Cloves(4 to 5)
  3. green cardamom( 4 to 5)
  4. Nutmeg (1/2 tsp)

Preparations

  1. Grease a 1 kg cake tin
  2. Preheat the oven at 180 degrees
  3. soak the  dry fruits in rum  for 4 to 5 hours till they absorb the entire alcohol.
  4. Strain the flour and cocoa powder and baking powder.
  5. Add the ground spices to the flour.
  6. Cream the butter and ghee with an egg beater.
  7. Add sugar and beat.
  8. Add the orange pulp and mix
  9. Add baking soda
  10. Break two eggs  and add in the mixture and beat.
  11. Add vanilla.
  12. Add milk and beat till the mixture is loose and fluffy
  13. Fold the flour mixture and mix gently with spatula till the mixture is uniform.
  14. Bake at 170 degrees for 45 to 50 minutes.
  15. When cool take it out from the tin.
  16. Soak with a mixture of sugar syrup and  rum(optional).
  17. Make a glaze with molten chocolate and heated cream.
  18. Apply on top of the cake and decorate with sprinklers.
