cheese canapes with spicy corn filling

I make these corn filling canapes very often during small parties organized at my home or during my daughter’s birthday parties.They are a huge hit .some times I add the fillings to ready made shells brought at stores.During time constraints they are a great rescue..In this dish in addition to mozzarella cheese,I used cottage cheese for preparing the base.They add a creamy texture to the canapes.Apart from being tasty this dish also looks gorgeous and kids specially cant resist putting them  quickly into their mouth..You can increase the content of cheese and make cheese baskets also.Calorie conscious people can avoid cheese totally and use cottage cheese.

Makes 8 canapes

Ingredients

1.Butter (2 tbsp)
2. Mozzarella (1/2 cup grated)
3.Cottage cheese or paneer (1 cup) grated

Filling

1.Corn boiled and drained(1 cup)
2.Mixed Italian herb seasonings(oregano,rosemary,garlic dried,salt)
3.Onions chopped (1 onion)
4.Garlic(1 clove crushed)
5.black pepper(1 tbsp)
6.Chilly flakes (1 tsp)
7.2 processed cheese slices

Preparation

1.grease a muffin tray
2.Mix the mozzarella and cottage cheese in a bowl.
3.Add a spoonful in each mold and press with a spoon to form the shape of a shallow disk.
4.Preheat the oven to 200 degrees.
5.Bake for about 15 minutes at 170 degrees.
7.let the tray cool take out the disks slowly without breaking.
8.Add a tsp of oil in the pan and saute all the ingredients except cheese for 2 minutes till the flavors blend.
9.Add some freshly chopped basil leaves.
10.Add these fillings on the baked cheese disks .
11.Top each canape with pieces of cheese slices.
12.bake on a greased tray for another 10 minutes at 180 degrees in OTG or microwave convection mode.
13.Garnish with basil leaves and serve when medium hot.
