Curry roux is an instant mix made of flour, butter and ingredients of curry powder which can be added to any meat or vegetable stew to get a wholesome curry. Japanese curry powder consists of a mixture of spices similar to the Indian curry powder but its less spicy. It also contains the grated lemon rind and some lemon juice. It makes a great combination with steamed rice.
Japanese chicken curry with homemade curry roux
Ingredients

- 1/2 kg chicken preferably boneless
- 2 cups chicken stock or water
- 1/2 cup potatoes cubed
- 1/2 cup carrots cubed
- 1 cup onions chopped
- 1 tbsp lemon rind
- 1/2 tbsp ginger grated
- 1 tbsp grated garlic
Curry powder
- 1 tbsp cumin powder
- 1 tbsp coriander powder
- 1 tbsp cayenne pepper
- 1 tsp turmeric powder
- 1/2 tsp clove powder
- 1/2 tsp cinnamon powder
- 1/2 tsp cardamom powder
Roux
- 4 tbsp of butter
- 2 tbsp of flour
- 3/4 th cup of water

Mix chicken with vegetables, onion, ginger, garlic, salt and lemon rind and stock and cook till tender

Heat pan.

Add butter

Saute flour and the ingredients of curry powder and fry till form a brown paste

Mix this paste in water.

Add this liquid paste in the chicken and vegetable mixture in batches and mix.

Cook for 15 to 20 minutes in low flame.

Serve hot with rice.

I’ll have to try this! I usually use ready-made blocks of curry. this s much healthier, for sure!
