Handmade gluten free potato noodles

With the rise of popularity of Korean music and drama among Indians Korean food is also getting popular specially among the young generation. Korean food uses a lot of potato starch which gives a crunchy texture to their fried chicken and dumplings. They also use a chewy sweet potato glass noodles in making a dish called Japche which is super delicious.

This article is about making handmade potato noodles from scratch at home, made from mashed potatoes and potato starch. You can also use tapioca flour or any other gluten free flour in these noodles. These noodles looked transparent and super delicious and were trending in Instagram a few months back. That’s when my daughter requested me to prepare these for her dinner. So here is the recipe..

Ingredients

Noodles

  • 4 to 5 potatoes boiled till tender
  • 1/4 cup tapioca flour or potato starch
  • salt to taste

Tempering

  • 2 tbsp of sesame oil
  • 2 garlic finely chopped.
  • 1 tsp chili flakes
  • 1 sprig of rosemary
  • 1 tbsp of honey
  • 1/2 tbsp of freshly ground black pepper

Instructions

  •  Peel and boil potatoes till tender soft
  • mash them smooth.
  • grind in a mixer if want to be quick.
  • mix tapioca flour and salt.
  • make a sticky dough.
  • Refrigerate for an hour to make it firm.
  • Cut into small balls and roll into thick noodles.
  • boil them till they float in water
  • Spread them on a plate.
  • heat sesame oil
  • add garlic and chili flakes and fresh rosemary.
  • pour the hot oil on the noodles and mix.
  • Add honey and mix of you like it sweet.
  • sprinkle some black pepper.
