Kachori is one of the most favorite Indian snacks ,hundreds of varieties and versions of whom you can find in the local regional sweet shops.They are essentially deep fried flat breads with a spicy ,savory or sweet filling inside. Kachoris seems to be invented by Marwaris ,who are vegetarians,and hail from the land of Rajasthan ,which is a state in the western part of the country .The filling of the kachoris are generally pulses or dals soaked grinded and sauted with spices.Different varieties of pulses are locally grown in the arid regions of Rajasthan ,which plays an important role in the cuisine of these regions due to scarcity of fresh vegetables and other ingredients.
Slowly over time this deliciousness spread to the entire country specially in the Northern and Eastern part comprising of fertile lands where kachoris are prepared with filling of seasonal vegetables like potato,spinach,peas ,radish etc.The awesomeness of the kachoris lies in the perfection of making the dough which makes the casing crispy leading your taste buds to a spicy flavorful filling.
Ingredients
Filling
- 2 cups Radish grated
- 1 tsp Ajwain or Carom seeds
- 2 to 3 chopped green chilies
- 1 tbsp ginger
- 1 tsp red chilly powder
- Salt to taste
Dough
- 2 cups refined flour
- 1/4 cup oil
- Salt to taste
frying
- 1 cup vegetable oil
Preparation
Dough
- Mix the contents of the dough till it leads to a crumbly mixture.
- Add 1 cup of water to make a tight dough.
- Cover and keep aside ,till you make the filling.
Filling
- Heat the pan
- Add 2 tbsp of oil in the pan.
- Add carom seeds.
- Follow by ginger and green chillies.
- Add grated radish and cook with salt.
- Add red chilly powder and mix.
- Cover cook for 10 minutes .
Kachoris
- Make small balls.
- Roll into a thin disk.
- Place 1 tbsp of filling in the center.
- Wrap the filling with the dough.
- Allow to rest for 5 minutes before rolling out again.
Frying
- Heat 1 cup of oil for frying.
- roll the filled balls into medium sized disks.
- or you can flatten them with fingers.
- Deep fry them in hot oil,till they puff up.
Mooli kachori
