There is an interesting history of this dish.This dish is the soul food of Bombay which the commercial cappital of India .It is said that the share brokers and the employees of the BSE (Bombay Stock exchange) need to be awake through out the night for the purpose of buying,monitoring and selling shares.So they need a fast food which is filling and nutritious.So the local hotels started serving breads with this spicy vegetables sauce made from boiling and mashing the leftover vegetables from the day.But now this dish has become the signature dish of Bombay now called Mumbai.
For The Bhaji
1 tbsp oil
3/4 cup roughly chopped onions
1/2 cup chopped capsicum
1 1/2 cups finely chopped tomatoes
1/2 tbsp fennel powder
1/2 tbsp turmeric powder
1 tbsp of kashmiri chili powder or paprica powder
1/2 tbsp of cumin powder
1/2 tbsp of coriander powder
1/2 tbsp of dry mango powder
1/2 tbsp of all spice powder(garam masala)
[pav bhaji masala is blend of all the above spices which can be procured from any indian store if you are living outside India or you can use your choice of spices.]
salt to taste
1/2 cup green peas
1 1/2 cups peeled potatoes
2 tbsp finely chopped coriander (dhania)
1/2 cup carrot
1/2 cup mixed sprouts
1/2 cup cauliflower
1 cup grated tofu
1 tbsp of ginger garlic paste
For The Garnish
2 tbsp chopped coriander (dhania)
1 tbsp of lemon juice
1 tbsp grated tofu
1.lemon slice
2 tbsp of Butter(optional)
Preparation
1.Boil the vegetables including onions and tomatoes with little turmeric and salt in pressure cooker.
2.In a wok add 1 tbsp of oil and add chopped onions and ginger garlic paste.
3.when it is golden add all the spices.
4.fry the spices and add all the vegetables .
5.cook the vegetables till they all mix together.
6.Mash the vegetables with some tool or after it cools down mash the vegetables with hand blender.
7.Continue to cook until the evegetables leave the sides of the pan.Add grated tofu and mix.
8.Serve with pav or bread with or without butter.
Tofu and Sprouts Bhaji Pav
