Gluten free Belgian waffles

My love with Belgian waffles may have started with trying waffles at the food court The Belgian Waffle Co. They serve waffles with varieties of fillings like Nutella, dark chocolate, fruits and nuts, ice cream etc.

Then I had prepare waffles for an event which was showcasing Belgium movies and they needed to serve some authentic Belgium food and I catered Flamiche and Belgian waffles.

The technique of cooking flour batter between hot plates dates back to the ancient era. But the origin of modern waffles is said to be in Greece , where these flat cakes, called “obelios,” were cooked between two metal plates. Waffles are prepared generally with refined flour but me and my daughter are gluten intolerant, so decided to give a try with the gluten free flours and the buckwheat flour (kuttu ka atta) gave the best texture. If you do not want chocolate waffles, just replace the cocoa powder with the same quantity of buckwheat flour.

Gluten free Belgian waffles

Recipe Ingredients

Dry ingredients

  • 1/4 cup cocoa powder
  • 1/2 cup kuttu ka atta (buckwheat flour)
  • 1/4 cup custard powder or corn starch
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda

Wet ingredients

  • 1 cup amul milk
  • 1 egg
  • 10 gm instant yeast
  • 1/3rd cup butter
  • 1 tsp vanilla
  • 1 cup brown sugar

Chocolate sauce

  • 1 Amul dark chocolate bar
  • 1 Amul fresh cream

Process

  • Mix all dry ingredients together
  • Separate egg yolk and egg white
  • Add vanilla to egg yolk
  • Beat egg whites
  • Add butter to egg whites and beat
  • Add egg yolk with vanilla and beat
  • Then add the milk with yeast
  • Add dry ingredients to this mixture and fold, till the mixture is flowy
  • Heat waffle iron
  • Add the mixture to the iron and bake for 12 minutes.
  • melt the chocolate for 40 seconds
  • Add warm fresh cream and mix till it turns to a fluffy creamy ganache.
  • Use a piping bag to drizzle ganache on the waffles.
  • Decorate with strawberries and kiwis.

Gluten free Belgian waffles

These are gluten free waffles crispy and soft from inside made with cocoa and buckwheat flour. They are crispy and fluffy due to the addition of yeast and custard powder

  3. Mix all dry ingredients together

  7. Add butter to egg whites and beat
  8. Add egg yolk with vanilla and beat
  9. Then add the milk with yeast
  10. Add dry ingredients to this mixture and fold, till the mixture is flowy
  11. Heat waffle iron
