Spinach egg curry | Palak egg curry

Necessity is the mother of invention and I can say necessity is a motivation for creativity too, specially if one day you return home from work and find only a bunch of spinach left in your vegetable box for cooking dinner. I decided to combine spinach to eggs forming a lipsmacking ,mouth watering curry which one can slurrp with any fried flatbreads.

Ingredients

  • 4 to 5 eggs
  • 100 gms spinach
  • 5 to 6 cloves of garlic
  • 2 onions finely sliced
  • 2 green chilies
  • 1 cinnamon stick
  • 2 to 3 green cardamom
  • 3 to 4 cloves
  • 2 tbsp of oil for curry
  • 1/4 cup of oil for frying onion

Preparation

  • Boil spinach with little salt  and garlic till tender
  • Drain the water.
  • Grind the spinach with green chilies and garlic.
  • Boil eggs and cut into halves.
  • Heat oil in a pan
  • Add whole spices cinnamon, cardamom and cloves. fry
  • Add and Saute the ground spinach in the oil.
  • Add 1/4 cup of water if required.
  • Adjust salt.
  • Add boiled eggs and mix ligthly
  • Cover cook for 5 minutes in slow heat
  • Separately fry onions in oil till crisp and brown.
  • Add with the curry and mix.
  • Serve hot with roti, parathas or rice.
